Tijdens de proefavonden quoteert elk lid de geproefde wijnen op een schaal van 20. Voor elke wijn wordt achteraf de gemiddelde score berekend aan de hand van de individuele appreciaties. Aan de hand van deze scores wordt per gildejaar een rangschikking opgemaakt.
